Utah is unique in flour milling in that we have several smaller flour mills operating in an industry in which the number of small locally owned flour mills in the US has been significantly reduced in recent years by the growth of national and international grain and milling companies.
Our Utah Mills purchase locally grown wheat, as well as wheat imported from Idaho and the Midwest, and they employ people from their communities. This is important to our Utah economy.
Part of the marketing effort for our mills is to "add value" to their flour by mixing it with other dry ingredients and marketing it as pancake mix, muffin mix, brownie mix, etc. Their success is testimony of their marketing saavy and ability to be responsive to a changing marketplace.
